Another curry, but what a difference

My adventures in food began with Jack Monroe’s Keralan Aubergine Curry the photo is before it cooked down, so the aubergine is still a tad raw at the moment I snapped it, I’m not sure why I didn’t get the finished product!

I’m assuming the restaurant in Southend that Jack mentions is Keralam, near central station as it is a firm favourite with us too. So I had to try this recipe first and I wasn’t disappointed! It’s a really light, fresh and zesty dish and I do love an aubergine.

It was also really refreshing not to use a fake meat or soya product, or even beans or chickpeas (as much as I love them), in this recipe the aubergine is the star of the show – and rightly so!
