I have fussy kids who won’t touch a dish that is all muddled together or covered in (heaven forbid) sauce, so this is my attempt at a clean looking stir fry for them!
So this is what those fussy vegetarian kids eat, the tofu is roasted and then marinated in soy sauce and garlic, which I also used a teeny bit of to flavour the noodles, then the veg was steamed. So not technically a stir fry, but the kids love it and hopefully one day will move onto the the mixed up, slathered in satay sauce version that us grown ups enjoy.
Quick Satay Sauce
2 heaped tablespoons peanut butter
4 tablespoons of soy sauce
Clove of garlic (crushed)
a shake of chilli flakes (to taste)
Splash of lemon or lime juice
Simply sling all your ingredients into a bowl and mix in the boiling water, enough until it slackens up. Add it to your stir fry just a couple of minutes before cooking time is up to take that raw edge of the garlic – and serve.
